1/4 cup light mayonnaise
1/4 cup reduced-fat sour cream
1 1/4 tablespoon sugar
1 (8-ounce) can crushed pineapple in juice, drained; or 1/2 cup chopped apple; or 1 8-ounce can Mandarin oranges, drained
4 cups (approx. 8 ounces) cabbage and carrot coleslaw mix
1/2 cup red bell pepper, chopped
Combine first 4 ingredients in a large bowl, stir with whisk until blended. Add coleslaw and red pepper into bowl with mayonnaise mixture. Toss all ingredients to coat. Cover and chill for at least 15 minutes.
Pair with Caribbean Chicken for a tropical and zesty dinner.
Yield: 4 servings (serving size: 1 cup).
