Olive oil-flavored cooking spray
1/2 pound skinned, boned chicken breasts, cut into 1-inch pieces
1/2 teaspoon dried rosemary, crushed or 1 teaspoon chopped fresh rosemary
1/8 teaspoon salt
1/8 teaspoon freshly ground pepper
1/2 cup fat-free, reduced-sodium chicken broth
1 (16-ounce) can cannellini beans, rinsed and drained
1 tablespoons sun-dried tomato sprinkles
Fresh rosemary (optional)
Coat a large nonstick skillet with cooking spray and place over medium heat. Stir-fry chicken, sprinkled with rosemary, salt, and pepper for 2 minutes.
Add broth, beans, and tomato sprinkles to skillet; bring to a boil. Reduce heat, and simmer, uncovered, 8 minutes or until chicken is done. Sprinkle with fresh rosemary, if desired.
Yield: 4 servings (serving size: about 1 cup).
