2 tablespoons olive oil
2 teaspoons minced garlic
1/4 teaspoon freshly ground black pepper
1 (16-ounce) package frozen, easy-peel, tail-on shrimp, thawed
2 tablespoons tequila
1 tablespoon fresh lime juice
1 tablespoon fresh cilantro, chopped
Heat olive oil in large skillet over medium-high heat. Add garlic and pepper, cooking until garlic sizzles.
Add shrimp and tequila to skillet. Cook for 5 minutes or until shrimp are pink. Stir in cilantro and lime juice.
Yield: 4 servings (serving size: 1/2 cup).
