8 ounces chicken breast tenders
1 1/2 teaspoons Greek seasoning
1/2 cup hummus
4 (8-inch) pita bread rounds
1 cup torn romaine lettuce
2 plum tomatoes, sliced
1 small cucumber, cut into strips
1/4 cup (2 ounces) crumbled basil and tomato-flavored feta cheese
Place a large nonstick skillet with cooking spray over medium-high heat. Sprinkle Greek seasoning over chicken; add to skillet. Cook chicken 6 to 8 minutes or until lightly browned, stir occasionally.
While chicken cooks, spread hummus over pita rounds. Arrange chicken, lettuce, and remaining ingredients over one half of each pita round. Fold pitas over filling; and secure with wooden picks.
Yield: 4 servings.
