8 ounces spaghetti, uncooked
1 teaspoon olive oil
1 1/3 teaspoons minced garlic
3 (6 1/2-ounce) cans minced clams
2 tablespoons shredded fresh Parmesan cheese
Freshly ground pepper
Cook pasta according to package directions, omit salt and fat.
While cooking pasta, heat oil in a large nonstick skillet over medium heat. Saute garlic for 2 minutes. Drain clams and reserve liquid. Add clam liquid to skillet, and simmer for 5 minutes. Add clams to skillet and simmer for 5 additional minutes.
Combine clam mixture with pasta into a bowl and toss gently. Sprinkle cheese and pepper over pasta. Serve immediately.
Yield: 6 servings (serving size: about 3/4 cup clam and pasta mixture).
