1/3 cup water
1 (16-ounce) package frozen mashed potatoes
1/2 cup 1% low-fat milk
1 tablespoon (1 can) drained chipotle peppers in adobo sauce, chopped
1/4 cup chopped fresh cilantro
1 tablespoon fresh lime juice (about 1/2 lime)
1/4 teaspoon freshly ground black pepper
Cook potatoes according to package directions. Add potatoes to saucepan over medium heat. Add milk, chipotle pepper, and remaining ingredients. Stir well. Cook for 2 minutes, serve.
Pair with Dijon-Lime Sirloin for a smashing dinner.
Yield: 4 servings (serving size: 2/3 cup).
