Total time: 10 minutes
4 (4-ounce) fish fillets, any kind will work
2 1/2 teaspoons Greek seasoning
1 (10-ounce) package frozen chopped spinach, thawed and squeezed dry
1 plum tomato, coarsely chopped
1 (4-ounce) can sliced pitted black olives
1/4 cup (1 ounce) crumbled basil and tomato-flavored feta cheese
Sprinkle seasoning on both sides of fillets. Coat a large nonstick pan with cooking spray and place over medium-high heat. Add fish to pan, cook for 4 minutes and turn fish.
Top fish with spinach, tomato, black olives, and feta cheese. Cover and cook for 4 minutes or until spinach is hot and fish flakes with a fork.
Yield: 4 servings.
