1/2 lb. beef strips
1 tablespoon Mexican seasoning
1 (16-ounce) package frozen pepper stir-fry
2 1/2 tablespoons creamy mustard blend
6 (2.5-ounce) hoagie rolls
3/4 cup (3 ounces) shredded part-skim mozzarella cheese
Heat a large nonstick skillet over medium-high heat; add beef strips and mexican seasoning, cook for 5 minutes. Add frozen pepper stir-fry, and cook 2 minutes or until heated through; then drain.
Take the bottom of each roll and spread on 1 teaspoon mustard blend, 1/2 cup beef mixture, top with cheese and top of each roll. Wrap sandwiches in aluminum foil. Bake at 350 degrees for 6 to 7 minutes or until cheese melts. Discard foil from sandwiches; serve immediately.
