4 (4-ounce) boneless, skinless chicken breast
2 1/2 teaspoons lime juice
1 teaspoon vegetable oil
2 1/2 teaspoons jerk seasoning
1 (8-ounce) canned crushed pineapple, drained
Place chicken between two sheet of plastic wrap or waxed paper and flatten to 1/4-inch thickness.
In a small bowl stir together lime juice and oil. Brush both sides of chicken with mixture and rub jerk seasoning on both sides of chicken.
Coat rack on grill with cooking spray and turn on to medium-hot heat. Place chicken on grill, cover, and cook for 6 minutes on each side or until chicken is not pink. Cut chicken in half.
Spoon pineapple over chicken and cook for 1 minute or until pineapple warm. Remove and serve.
Yield: 8 servings (serving size: 2 ounces chicken).
