Avocado the New Super Food

I never used to eat many avocados. Then I moved to the southwest a few years ago, and I kept finding them on salads, sandwiches, and in the great tasting southwest dishes. My first thought was don’t avocados have too much fat in them. I was surprised to find that avocados are loaded with healthy essential fats that our bodies need. The fat in avocados is perfect for LIVE’s Fit for Life members.

Your heart will love you the more avocados you eat. The fat is monounsaturated which is what our bodies want, as compared to the saturated fats we want to avoid. Avocados are also a great source of vitamin E, and have more potassium than the popular banana. They also contain folate, vitamin B6, fiber, and many antioxidants. The greatest aspect of avocados is the cholesterol-lowering phytosterol beta-sitosterol, which has been demonstrated to reduce blood cholesterol. The healthy fat helps stabilize your blood sugar and supports your body burning fat the entire day.
When buying avocados there are some tricks to picking the right one. Put slight pressure on the avocado, if it gives just a little without leaving a dent it is ripe. If your pressure leaves a small dent these are perfect for making guacamole. Large dents and the avocado has pasted its prime. You can buy your avocado hard and let it ripe on your countertop.

There are a few tricks to preparing an avocado. First, using a knife slice the fruit in half, make sure to work around the seed. Next twist the halves apart revealing the seed stuck to one of the sides. Use your knife to help cut out the seed. Using a spoon, wedge it between the skin and the flesh part and peel away the skin. You want to splash some lemon or lime juice onto the avocado. This holds in the moisture as it is sensitive to the open air. Cut the avocado into the size pieces you want and enjoy. Make sure to store them in a sealed container in the fridge to keep them fresh for future use.

The avocado can be used in many different ways. You can substitute an avocado for meat and cheese in many dishes. Great on sandwiches in wedge form or smear onto the bread instead of butter. One of the best ingredients that you can put on any salad. A good idea is to replace your high saturated fat dips with fresh guacamole or an avocado spread to go along with your tortilla chips. My favorite way is to sprinkle it on chicken or fish to add great flavor and great nutritional power. Avocados can be added to most of LIVE’s recipes, enjoy.
